A long and cool ripening season on the Bellarine Peninsula allowed pristine fruit to fully ripen, providing wines with great flavour and length. Our rosé was made from our hand picked pinot noir grapes. After destemming the pinot noir, rosé was bled off the ferment using a technique known as saignée the following morning. This gave the wine its lovely salmon or onion skin colour. The juice was fermented naturally in old French barriques and matured on light ferment lees for 6 months.
Rose petal, musk stick and violets leap out of glass giving instant appeal. A hint of nougat from lees contact gives further complexity. On the palate rich cream and musk flavours are balanced with fine tannin extract. The wine is bone dry with a hint of grape seed extract which keeps the palate crisp even after your second or third glass.
